It all began with a challenge. Someone told me that cookies, high quality or not, cannot be made without flour. After this, and extensive research, "flourless" became a passion of mine as I proved this statement wrong.
Bizzy Lizzy Gourmet Flourless Cookie takes the words "gourmet delicacy" to a new level. The rich deep flavor in this cookie makes your taste buds come alive and satisfies your sweet tooth, without being too sugary. Each cookie is designed to go with a cold glass of milk or juice and fill you up until the next meal. With the right blend of textures and flavors, the "missing" ingredient won't even be on your mind. Instead, when you are through you feel like you had something truly worth eating.
Our Story
In early 2007, Sheila Rae saw a need for a high fiber, high protein meal replacement that actually tasted good. After many hours of trial and error, the Bizzy Lizzy Bakery Dark Chocolate Chip Cookie was formed. Her husband Erik soon suggested testing the product at farmers markets to test its profitability. Each time out the couple would sell out with great raves over the high quality of the product. The company is named after Erik and Sheila Rae's daughter, Elizabeth. Elizabeth published a children's book at age seven after Sheila Rae had published her own cookbook. Elizabeth announced to the family that she thought she should write a book and when asked on what she said, "Well of course cookies because I am a expert." She then proceeded to write the book and started speaking to elementary students on her process. When the bakery needed a name it just seemed fitting to name it Bizzy Lizzy because Lizzy is certainly "Bizzy". When you buy from Bizzy Lizzy you will know with the first bite that your cookies were made for you. Sheila Rae takes great pride in producing her cookies in her specially designed commercial kitchen. As she built the kitchen she added natural green stripes and rich deep greens to represent the earth. She feels food should be real and that you should be able to read every ingredient and know what it is. Each box of these cookies are hand packed and topped with a special note from Sheila herself.
